- 2/3 rds smoked chicken breast cut 1.5 cm strips at 45 o/o
- Ruby grape fruit cut into segments 8 pieces
- 1 ½ hass avocado cut into 2cm crescents
- 75 grms of 2cm cubes of feta cheese
- Dressing
- 30mls Juice of fresh orange
- ¼ tsp. chopped red chili
- 1 tsp. soy sauce
- 2 tsp. vinegar
- 30 mls olive oil
- ½ head baby gem leaves removed
- ½ head chicory (red if available) leaves removed
Add leaves to large bowl mix gently with 2 tsp. dressing dressing and ½ the above prepared ingredients
Place on 8/10 ins bowl creating height
Scatter with remaining ingredients and finish with further 2 tsp. of dressing.
